Winter squashes are so good on their own, that barely any seasoning is needed.
This recipe is so simple and easy. Use it with ANY WINTER SQUASH!
1 butternut squash (or any squash) - peeled, seeded, and cut into 1-inch cubes
1 half cup of pork lard or beef tallow or ghee *each fat produces a new flavored dish! Enjoy this recipe with a different choice of fat each time*
1/2 hand of garlic, minced (I normally mince the whole garlic pod and jar half in a mini mason jar to use in other dishes)
real salt and organic ground black pepper to taste
Preheat oven to 450 degrees F.
Toss butternut squash with choice of fat and garlic in a large bowl. Season with salt and black pepper.
Arrange coated squash on a parchment paper lined baking sheet. so that the cubes are evenly spread out.
Roast in the preheated oven until squash is tender and browned, 30 minutes.
